1 Tablespoon kosher salt
2 Tablespoons freshly squeezed lemon juice
2 Tablespoons fresh oregano, chopped
2 cloves garlic, minced
Place the chicken in a large sip-top bag. Mix the remaining ingredients in a small bowl, and then add to the bag. seal the bag and mix well, ensuring the marinade covers all of the chicken. Let marinade for 20 minutes or up to 24 hours. Thread the chicken onto skewers, and broil or grill until golden.

1 quart plain greek yogurt
4 cloves garlic, minced
1 Tablespoon dill
1/2 Tablespoon kosher salt
1 cucumber, peeled, seeded, and finely diced
Mix all ingredients together. Refrigerate for 1 hour to allow flavors to blend. Store in a sealed container in the refrigerator.
And what’s a good Greek meal without some lemon rice?
1 cup long grain rice
2 cups chicken broth
juice from 1 lemon, about 2-3 tablespoons
1 teaspoon turmeric
Heat the broth over medium heat in a large sauce pan. Add the turmeric and lemon juice, and bring to a boil. Add the rice, cover, and reduce to a simmer. Simmer for 15-20 minutes, or until rice is tender and fluffy.
