Remember that part in Forrest Gump where Bubba goes on and on and on and on and on about shrimp? Well, salmon is kinda the same way – it’s highly adaptable to whatever flavors or cuisine you’d like to make with it. Case in point – curried salmon. The curry and the yogurt bring out the natural tanginess of the fish. It’s simple, quick, and unique.
4 salmon filets
1 cup plain yogurt
1/2 cup lemon juice, freshly squeezed
1 tablespoon yellow curry powder
1/2 tablespoon red curry paste
1 teaspoon salt
Mix all the ingredients except the salmon in a small bowl. Place the salmon in a zip-top bag. Add the marinade, and close the bag. Marinate for 2 hours in the refrigerator, turning every 30 minutes to ensure even coverage.
Pre-Heat the oven to broil on high. Place the salmon filets on a baking sheet lined with foil. Discard the marinade.
Broil for 5-7 minutes, or until cooked to desired doneness.
Serve with quinoa and french green beans.
