If you’ve got some french fries to eat, you’re gonna need something to dip ‘em in, right? Ketchup is fine if you’re under the age of 7, but grown-ups need a little something extra – something with a kick! This chipotle aioli fits the bill nicely. It’s easy to make, tastes awesome, and you will impress your friends because you know how to make a fancy-schmancy aioli (which is really just a flavored mayonnaise. For real.)
1 teaspoon mustard (any kind will do)
1 teaspoon salt
4 cloves garlic
juice from 1 lemon
3-4 cups oil (olive or canola)
1 (7 oz.) can chipotle peppers in adobo sauce
In a blender, briefly pulse the eggs, yolks, garlic and mustard. With the blender on high, slowly drizzle in half of the oil. Add the lemon juice, salt, and chipotle peppers. Turn the blender on high again, and add remaining oil until desired consistency is reached.
That’s it. I told you it was easy. It’ll keep in the fridge for a couple weeks, but it really shouldn’t last you that long.
